1) Name Calling

Guests want to feel like they’re a name – not a number. Even when the bar is packed, Michelle from Sarasota, Florida swears by these bartending tips:

“When a guest hands me their credit card to open a tab, I look at the name on the card, look back at the guest, smile, and say ‘thanks Dave, I’ll keep this open for you.’ Then, when he orders another round I use his name. It makes him feel like a VIP in front of his friends and builds a quick rapport between us…sales come easier the rest of the night.”

Michelle’s first-name bartending tips are actually backed by science: a study showed that when hearing one’s name, the part of the brain associated with reward and pleasure is activated.

2) Strategic Samples

When a group approaches the bar, Shavonne from Rochester, Michigan looks for the “leader” or “influencer” of the group – coincidently he or she often orders first. Shavonne then suggests a premium product like a special cocktail or craft beer, if the “leader” goes for it – Shavonne compliments the choice, then immediately asks the group if anyone else would like the same drink.

“I’d say about half the time the rest of the group gets the premium drink,” Shavonne added.

Bartenders are often in control of the playlist, and it can directly impact your sales.

One study showed that playing slow tempo music can increase drink sales by up to 40% during slow times. So, resist the urge to “amp up” guests with loud music.

“I use slow times to my advantage. I take multiple orders and fill them quickly. It’s like a rhythm I get into – you could say it’s like running a drill or training. Then when the bar is slammed, I feel ready for the fast-paced action.”

7) Always Acknowledge Guests

Adam also said the only thing that bothers him on busy nights is making people wait.

To make the wait less tedious for guests, Adam acknowledges each and every one. It could be a simple nod or smile. You can do this while pouring a beer – look up and make eye contact with every customer.

      The “pain of making people wait” should not necessarily warrant the addition of an extra bartender. Anyone with any real bartending experience will tell you that most busy bars can fill up and clear out several times a night and scheduling an extra bartender because of an anticipated surge in business, albeit short lived is counter productive, I. e. it pisses off the other bartenders who are regularly scheduled for that shift and now they have to split tips with someone who may or may not be needed for a very short duration of time.. Professional diners/ bar patrons know this and fully expect to have to wait a little longer than they may have during previous visits. They except this as part of the business and are even glad to see it, as this shows that the restaurant/bar is in good health. For those customers who get impatient or irritated because they are not immediately acknowledged during peak business hours may want to reconsider their choice of venue. Dining out should be relaxing and fun. If you’re trying to catch a movie and didn’t adequately allow enough time, there are restaurants who have built their business model around people who fit that exact description. As someone who has been bartending professionally for over 30 years this is my biggest gripe and it gets worse every year. I’ll greet you with a menu and a smile within a few short minutes….may even be able to take your drink order right away. But, call out to my back as I fly past you with a handful of drinks for the service bar or for other bar patrons and we have a problem. Just because you’re ready to order doesn’t mean I’m ready to take it. RELAX and SLOW DOWN. If that’s not an option then consider a fast food alternative

    I’m definitely going to be studying this because I i really want a bartending job. I want to ensure I make people happy and also make the restaurant a great rep of them. My interview is tomorrow and I’m excited but nervous!! Lol

      I question the legitimately of your “tips” and have to question whether these tidbits of advice from “career”bartenders actually came from anyone who really spent any time behind a bar or from anyone who takes the job seriously. It sounds to me like someone scrambling to put together a story based on foggy memories of frat house bartending or even secondhand accounts of someone “who used to bartend” trying to put together a story without the least bit of experience based on secondhand accounts. Christ, if I had a dollar for every time I heard someone say that they used to bartend I would have long since been retired. Anyone who considers themselves to be a career bartender can very easily distinguish themselves from those who have spent even the most minimal amount of time behind a bar because of the difference in attitude between short-term bartenders who approach their job as a quick means to an end (i.e. waiting for something better to come along) while making very good money and those who weigh every decision they make behind the bar with one thought in mind: how will this affect customers/business in the present and in the long term
